Yesterday I shot a second video for the preparation of green tea:
 

 
This is the most common method in China, usually in a glass.
 
Personally, I find that the method in the first video brings better results. Nevertheless the method in the second video is more practical and, if you pay attention to the water temperature, gives a pleasant drink anyway.

It is not important to brew in a gaiwan, but it is important to avoid pouring the tea in another container. It shall be drunk out of the same glass/cup/gaiwan in which it is steeped.

This way the leaves are always covered with water and the tea continues steeping while drinking. When the tea is getting to bitter, you just add water on top. It will get bitter before you completely drink the tea.

And why should I leave the tea brewing while sipping it ?

The other method (first video) gives better results and the tea is not steeped while drinking.

The second method however is easier, for you don't need a second container to drain the tea in. The taste of the tea changes while drinking, allowing you to experience different taste at every sip.
So the method is easy and offers a complete drinking experience.

Nevertheless there is no clear explanation why you should steep it while drinking. It is simply the way they do it in China... and they have been drinking tea for hundreds of years

Bonjour à tous,

Nannuoshan organise 3 sessions de cérémonie du thé chinois à Paris et proche Banlieue les 11 et 12 juin prochains.
Il s'agira d'une cérémonie avec les derniers thés frais que Gabriele, le fondateur de Nannuoshan va sourcer en chine directement dans les fermes. Gabriele part en Chine demain pour un mois et demi pour sourcer ses thés.

Une participation de 5 € est simplement demandée afin d'éviter des inscriptions "fantômes" et ces 5 € sont remboursés pour toute commande au dessus de 40 €. Gabriele vient exprès de Suisse et veut juste "couvrir" ses frais de transports.

Je l'aide simplement à organiser tout cela car il n'est pas francophone mais je n'ai aucune action dans la marque.

Cela se passera dans plusieurs endroits car il y aura 3 cérémonies et sur 2 jours (11 et 12 juin). le 11 cérémonie à 11h et à 16h et le 12 à 11h (Gabriele retourne chez lui à Zurich ensuite)
Une aura lieu chez moi (15 min en train de Paris Magenta (juste à côté de la gare du Nord - je suis à Villiers sur Marne dans le Val de Marne - 94), une probablement dans un petit resto parisien dans le 9ème arrondissement (mais je suis en train de finaliser - ou pas...à voir) et je cherche un 3ème volontaire pour accueillir une réunion chez lui/elle.

Ce n'est donc pas une grande organisation événementielle mais plutôt un lieu de rencontre vrai et simple, amical autour du thé avec un vrai passionné et la possibilité de goûter en avant première les nouvelles sélections de la marque.
